Chicken Lettuce Wraps April 5, 2011

I used to make PF Chang’s lettuce wraps quite a bit last summer and now that it’s starting to get nice out, I was really craving them. However, after switching to paleo, I had to revamp the recipe to make it paleo friendly. (the old recipe had ALOT of sugar in the sauces!)

Chicken Lettuce Wraps


  • 1 tbsp coconut oil
  • 2 chicken breasts, diced into small pieces
  • 6 baby carrots, minced in a food processor
  • 1 can of water chestnuts, minced
  • 1 handful of mushrooms, diced
  • 1 bunch of green onions, diced
  • 4 garlic cloves, minced
  • 2 tsp coconut aminos
  • 2 tbsp white vinegar
  • 2 tsp honey
  • Lettuce for wraps: Romaine and Bibb usually works best


Heat oil in pan over medium heat, add diced up seasoned chicken and cook until browned. Meanwhile, stir aminos, vinegar, and honey together. Once chicken is cooked, add all minced/diced veggies and sauté 1-2 minutes, then add sauce above, stir and cook additional 1-2 minutes. Add Asian nut sauce to chicken mixture before serving.

Asian Nut Sauce


  • 2 tbsp almond butter
  • 1 lime, juiced
  • 3 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 1 tsp chili powder
  • 1 tsp coconut aminos
  • 1 tbsp sesame oil


Mix all sauce ingredients together and stir to mix evenly.
