Spicy Slaw and Fish Tacos May 5, 2011

Celebrating Cinco de Mayo with fish “tacos”! So I may have cheated and got pre-marinaded mahi mahi (tequilla lime marinade) from whole foods, but I WILL make my own fish tacos at some point. I added a spicy slaw to go along with the “tacos” but when I had leftovers, the fish was great mixed in with the slaw. I topped the tacos with the slaw for an extra crunch as well as had some on the side on it’s own.

Spicy Slaw Recipe

Ingredients

  • medium sized head of cabbage
  • red onion, diced
  • handful of carrots
  • half of a jicama, sliced into small pieces
  • white vinegar
  • olive oil
  • crushed red pepper
  • 3-5 cloves of garlic, minced
  • 1/2 lemon, juiced

Directions

Slice cabbage into thin slices, and then in half again. Place red onion and carrots in food processor and mix until in small pieces. Slice jicama into thin slices, roughly the same size at the cabbage slices. Combine above ingredients in a large bowl. In a small bowl, combine equal amounts white vinegar and olive oil. Add in crushed red pepper and minced garlic. Squeeze in juice from the half slice of lemon and mix thoroughly. Add in a NorCal margarita for a fun Paleo Cinco de Mayo!

For the fish tacos, I sauteed the mahi mahi chunks with a little bit of olive oil until cooked through and placed on top of romaine lettuce leaves. The slaw was sprinkled on top, then roll up the lettuce and enjoy!
