This is one of my new go-to breakfast meals, especially on Sundays when I teach TurboKick in the late morning because it keeps me satisfied through class, not too heavy, but very filling! And it’s relatively quick to make! This is a recipe out of Robb Wolf’s “The Paleo Solution” that I tweaked just a little bit. Even though it doesn’t look too pretty, it is DE-LICIOUS! It kind of reminds me of french toast, minus the bread 🙂

Peach and Pecan Scramble


  • 1 tbsp coconut oil
  • 1 small peach, diced into small pieces
  • 4 tbsp pecans, chopped
  • 2-3 eggs
  • 1 tsp cinnamon
  • 2 tbsp unsweetened applesauce


Heat the oil in a small skillet over medium heat and then add diced peaches and chopped pecans. Cook for approximately 3-5 minutes or until the peaches soften. Meanwhile, crack eggs into bowl and add applesauce and cinnamon, beating well. Add egg mixture to skillet; let the eggs set on bottom, then flip. Make sure the eggs are cooked through before enjoying. I typically double this recipe and save half for a second breakfast during the week.

    Interesting combo of mixing fruits and eggs 😀 I thought at least you used some coconut flour or almond flour like typical paleo style breakfast pancake and turned out you didn’t! 😀
