I love spinach artichoke dip, but let’s all admit, it’s not the best thing on the planet 😦  So why not substitute the bad stuff (dairy, cheese, etc) with a good protein source like chicken and make it a meal! That’s where the inspiration for this dish came from. Plus it’s a quick and easy recipe for those nights you do not have a lot of time, but need a tasty meal! ENJOY!

Spinach Artichoke Chicken

Ingredients

  • 1 tbsp coconut oil
  • 2-3 cloves garlic, minced
  • ¼ red onion, diced
  • 2 chicken breasts, diced into 1 inch cubes
  • 2 tbsp Dijon mustard
  • 1 can quartered artichokes, drained, rinsed, and cut into small pieces
  • 1 roma tomato, diced
  • 2 large handfuls of baby spinach

Directions

Add oil, garlic, and onion to pan, cooking over medium heat until softened. Add chicken and cook until just browned. Add mustard and finish cooking the chicken.  Add artichokes and spinach, cover to let spinach wilt, stirring occasionally. Top with diced tomatoes.

I like your idea of taking a much loved but fattening dip recipe and turning it into a healthy dish.
