I feel like cabbage gets a bad rap. But I was one who gave it a bad rap a few years ago. Wouldn’t touch the stuff…disgusting, gross, not my thing. Well I have changed my mind over the past few months and decided to give this veggie a chance. I am now making various coleslaws with it, and substituting thinly sliced cabbage for noodles! YUMMY!!!
Cabbage Sausage Stir-Fry
- 1 lb sausage
- 2 tbsp coconut oil
- 2 cloves garlic, minced
- ½ red onion, diced
- ½ head cabbage, sliced into thin strips
- 2 carrots, thinly sliced
- Paprika, salt, and pepper to taste
Cook sausage in pan until cook thorough. Remove from pan. Warm coconut oil in pan and cook onions and garlic until softened. Add cabbage and carrots, cooking for 10 minutes until cabbage starts to soften a bit and becomes “noodley” Add in seasonings to your liking after 1-2 minutes. Add sausage back into the pan and stir, mixing well.
