Mahi Mahi Tacos with Pineapple Avocado Salsa August 23, 2011

I got a whole pineapple at needed to use it up pronto before it went bad. And versus just eating pineapple for days, I wanted to make something creative with it. I found Mahi Mahi pieces at TJ’s the other day and thought those would be awesome for fish tacos because they were already cut up into pieces and frozen, so you could use as many or as little as you wanted….thus Mahi Mahi Tacos and Pineapple Avocado Salsa for dinner!

Mahi Mahi Tacos


  • 1 package frozen Mahi Mahi pieces
  • 2 cloves garlic, minced
  • ¼ red onion, minced
  • 1 tbsp coconut oil
  • Romaine lettuce leaves


Heat oil over medium heat and then add garlic and onion until softened. Add Mahi Mahi pieces and cook for 5-8 minutes or until fish cooked through. Place a few of the fish pieces on pieces of romaine lettuce (other big leaf lettuce works well too). Then top with salsa.


Dust with almond flour for a “fried” taste if desired. Also AMAZING with pineapple avocado salsa!

Pineapple Avocado Salsa

  • 1 pineapple, cored, and diced into small pieces
  • 2 avocados, diced
  • 3 cloves garlic
  • ½ red onion, diced
  • 1 jalapeno, seeded and minced
  • 2 limes, juiced
  • A handful fresh cilantro


Combine all ingredients and let chill for at least 30 minutes to mix flavors.
