I typically teach TurboKick late morning on Sundays, so I need something in the early morning to hold me over until class is over, but not too heavy, and it needs to pack an energy punch! Thanks Everyday Paleo for inspiration for this recipe. I had mine with a little bit of almond milk and an all natural chicken apple sausage! You can also eat it by itself as a cobbler!

Blueberry Cobbler

Ingredients

  • 1 ½ cups frozen blueberries
  • 1 ½ cups frozen blackberries
  • 1 ½ cups almond meal
  • 1 egg
  • 2 tbsp coconut oil
  • 2 tbsp cinnamon
  • 1 package slivered almonds
  • Honey for drizzle

Directions

Preheat oven to 350 degrees. Mix blueberries and blackberries in bottom of oven safe baking dish. In another bowl, mix together the egg, almond meal, coconut oil, and cinnamon, stirring until mixture becomes crumbly. Drizzle a small amount of honey over the berries and then crumble flour mixture over berries. Bake for 35 minutes.

Tips

This can be served warm or chilled. I poured a little bit of almond milk over top to make a “cereal” type breakfast.
