Jalapeno Crab Cakes and Broccoli Slaw September 12, 2011

So I love jalapenos…I cannot help it. I buy them by the pint almost weekly and they are never ever out of stock in my place. And I add them to everything!!! And today, I added them to crab cakes. I can honestly say this meal may be one of my all time favorites. My non-paleo roomie also thought it was delicious. Of course, you could make this without the jalapeno, but why? 🙂

Crab Cakes

Ingredients

  • 1 jar crab meat
  • 3 green onions, minced
  • 3 cloves garlic, minced
  • 1 jalapeno, minced
  • ½ lemon, juiced
  • 1 lime, juiced
  • 1 egg
  • 2 tsp dill weed
  • 2 tsp chipotle seasoning
  • Coconut flour
  • Coconut oil

Directions

Mix all ingredients together in bowl, adding coconut flour as needed until you are able to form into patties. Cover with plastic wrap and place in fridge for 30 minutes to help firm up the patties. Lightly dust patties with more coconut flour when ready to cook. Heat coconut oil in a skillet over medium heat. There should be enough oil just to cover the bottom of the skillet. Place the patties in the oil, cooking until browned on each side and heated through.

Broccoli Slaw

Ingredients

  • 1 bag pre-cut broccoli slaw
  • ¼ cup olive oil
  • ¼ cup white vinegar
  • 2 tbsp Dijon mustard
  • 2 tsp garlic powder

Directions

Mix ingredients from olive oil to garlic powder for dressing. Place slaw on small plate and drizzle with dressing.
