Ahi Tuna Steaks and Broiled Asparagus November 29, 2011

Need something quick and easy??  This is your meal! Got home from the gym around 6pm and already sitting here eating and blogging! Ahi Tuna is a great protein source with minimal fishy taste (ps, I HATE canned tuna but LOVE ahi tuna!)

(there may only be half a tuna steak because I was so hungry, I started eating before I took the picture)

Ahi Tuna Steaks

Ingredients

  • 2 tuna steaks
  • 1 tbsp coconut oil
  • 2 cloves garlic, minced
  • Seasonings: red pepper flakes and parsley

Directions

Thaw out tuna steaks. Melt coconut oil and mix with garlic, red pepper flakes, and parsley. Marinade tuna steaks for at least 30 minutes in this mixture. Warm skillet over medium heat. Be sure to have the skillet HOT before putting tuna steaks on.. Cook 4 minutes each side. The inside will still be pink and if that bugs you, cook a little bit longer, although they will be tougher. Set oven to broil. Heat up coconut oil and drizzle over asparagus. Sprinkle with dill. Broil for about 10 minutes, turning asparagus a few times until just browned.

Broiled Asparagus

Ingredients

  • 1 tbsp coconut oil
  • 1 bunch asparagus, ends trimmed
  • 1 tbsp dill weed

Directions

Set oven to broil. Heat up coconut oil and drizzle over asparagus. Sprinkle with dill. Broil for about 10 minutes, turning asparagus a few times until just browned.
