Quick Lettuce Wraps December 3, 2011

I had one chicken breast and several various veggies in my fridge and was not in the mood for leftovers, but very, very hungry after a wonderful evening of CrossFit…pretty similar to my Chicken Lettue Wraps but a little variation and only took about 15 minutes. ENJOY!

Spicy Lettuce Wraps

Ingredients

  • 1 chicken breast, diced into very small pices
  • 1 jalapeno, minced
  • 2 cloves garlic, minced
  • 1/8 red onion, minced
  • handful of shredded carrots
  • 1/4 zucchini thinly sliced into small strips
  • 10 small mushrooms, diced
  • coconut oil
  • crushed red pepper flakes
  • 1 tbsp almond butter

Directions

Brown cut up chicken (It shouldn’t take very long since they are in small pieces) with garlic and onion in melted coconut oil. Add jalapenos when chicken is almost finished being thoroughly cooked. Add the remainder of the veggies and red pepper flakes, cook 1-2 minutes until softened. Add almond butter and gently stir until melted with chicken. Serve with large lettuce leaves.
