Asian Pork Lettuce Wraps December 14, 2011

So this isn’t my recipe at all, but I made it and loved it so much I needed to share. This recipe comes from Holly Would If She Could‘s blog! (Thanks Brian Z for sharing the link!)  Be sure to check out her stuff, she’s got some pretty tasty looking stuff on there! I omitted the ginger from the recipe because I just don’t like it.

Asian Pork Lettuce Wraps

Ingredients

  • 3-4 lbs pork shoulder (butt)
  • salt and pepper for seasoning
  • 6 cloves garlic, minced
  • 4 tbsp coconut aminos
  • 2 tbsp almond butter
  • 1 tbsp honey
  • 2 tbsp apple cider vinegar
  • 2 tsp sesame oil
  • 2 tbsp sriracha sauce
  • Romaine/Bibb/ or any other lettuce that makes a good cup/wrap
  • diced cabbage, carrots, and jicima
Directions
Lightly coat inside of slow cooked with coconut oil. Clean the pork shoulder (trim the fat and it should be in a few various sized chunks) and then season with salt and pepper as desired. Throw into crockpot and add minced garlic. Prepare sauce with ingredients from coconut aminos to sriracha sauce by mixing thoroughly. Pour sauce over meat, set crockpot on low, and cook 6-8 hours or until meat is cooked. Let cool slightly and shred meat. I mixed up diced cabbage, carrots, and jicima to top the lettuce wraps with, which is optional. ENJOY!
