I’ve tried to like Kale numerous times and it usually doesn’t work out…WELL UNTIL NOW! I found the chicken recipe in Make it Paleo and was inspired by Nom Nom Paleo‘s kale recipe! Both called for vinegar, so I used balsamic for both to keep things consistent and both turned out delicious!
Rosemary Garlic Chicken
- 3-4 chicken breasts
- 1 tbsp Coconut oil
- Salt and pepper for seasoning
- 6 cloves garlic, minced
- A few sprigs of fresh rosemary
- Balsamic vinegar to drizzle
Clean, rinse, and pat chicken breast until dry. Spread coconut oil over chicken. Season the chicken with salt and pepper if desired. Press rosemary and garlic into chicken. Bake chicken at 400 degrees for about 20 minutes or until chicken is just cooked through. Drizzle with balsamic vinegar and return to oven for a few more minutes to set.
Stir Fried Kale
- 4 slices bacon, thinly sliced
- 4 garlic cloves, minced
- ¼ red onion, diced
- One bunch kale, stems removed and thinly sliced
- Juice from 1-2 lemons
- 1-2 tbsp balsamic vinegar
Add bacon to skillet and cook until crispy. Add onion and garlic and cook for additional 2-3 minutes, until soft. Add sliced kale, sautéing for a few minutes. Add lemon juice and vinegar and continue cooking until wilted. Take off heat immediately and serve warm.
