Banana, Coconut, and Dark Chocolate Treats January 29, 2012

These will be a bit softer than your traditional cookie, however, they are still amazing. Think banana bread meets soft cookie with a bit of dark chocolate and coconut. I changed up the recipe a bit from What Runs Lori as the way I made it and the batter was super thin. I was still happy with the results. A nice chewy, soft treat with minimal sugar, fat from avocado, and a bit of chocolate and coconut to make me happy!

Ingredients

1 ½ cups coconut flour

1 tsp baking soda

¼ tsp baking powder

1 tsp sea salt

2 ripe bananas

¼ ripe avocado

1 cup coconut milk

2 tbsp honey

1 tbsp apple cider vinegar

1 tsp vanilla extract

2 eggs

¼ cup shredded coconut

¼ cup dark chocolate chips

Directions

Preheat oven to 375 degrees. Mix all ingredients together except coconut and chocolate chips using a hand mixer. Fold in coconut and chips when well blended, adding more coconut flour if too thin of a consistency. Use a ice cream scoop, place ¼ cup of batter on greased baking sheet, spreading evenly. Bake for approximately 20 minutes, or until browned.
