Scallops with Bacon and Basil

Ingredients

6 slices bacon, thinly sliced

1 shallot, minced

10-12 large scallops

2 lemons

Fresh basil, thinly sliced

 

Directions

Cook sliced bacon in skillet until crispy. Add minced shallots to bacon and cook for 1-2 minutes. Add scallops, cooking approximately 3 minutes on each side. Squeeze juice from the 2 lemons onto the scallops and top with thinly sliced basil. Simmer 1-2 minutes until all flavors blend.
