I had lots of veggies hanging out in my fridge along with a package of ground turkey meat…so this is what I came up with. ENJOY!

Turkey Meatball Soup

Soup Ingredients

1 tbsp coconut oil

4 cloves garlic, minced

½ red onion, minced

2 leeks, sliced

2 medium carrots, sliced

2 zucchini, sliced

4 cups chicken stock

2 teaspoons dried oregano, basil, parsley, and garlic powder

Salt and pepper to taste

Meatball Ingredients

1 pkg ground turkey

2 cloves garlic

2 tsp basil and parsley

1 egg

1/3 cup almond flour

Salt and pepper to taste

Directions

Preheat oven to 400 degrees. Prepare meatballs by mixing all ingredients and then forming into small meatballs. Place on cookie sheet lined with foil and cook 15-20 minutes or until no longer pink in the center. While meatballs are cooking, heat oil in a stockpot over medium heat and sauté garlic and onions for a few minutes; add leeks and carrots until slightly softened. Once carrots soften, add zucchini and continue sautéing for a few more minutes. Add chicken stock and seasonings and simmer for 15 minutes. Add meatballs when soup is ready.
