Tomato and Artichoke Chicken May 30, 2012

I could have added a few more words to that list up there, so if someone can come up with a cooler recipe name, have at it, I’m open to suggestions. It was memorial day weekend last weekend, so I was a little over grilled chicken and the like but had a few chicken breasts to cook up, so I decided to start throwing some ingredients together and see what would come about, and it was taste test approved 🙂

Tomato and Artichoke Chicken


  • 2 chicken breasts, cut into strips
  • 1 tbsp coconut oil, to line baking dish
  • 1 can fire roasted tomatoes
  • 1 can artichoke hearts, chopped
  • Handful fresh basil, thinly sliced
  • 1 lemon, juiced
  • salt and pepper to taste


Preheat oven to 425 degrees. Clean and trim chicken, cutting into strips, chunks, or whatever you like. Salt and pepper chicken to your liking. Grease bottom of baking dish with coconut oil, add fire roasted tomatoes and artichokes. Place strips of chicken on top and sprinkle about half the basil on top. Cook for approx 20 minutes, add lemon juice and stir. Place back in oven for about 10 more minutes or until chicken is cooked through. Sprinkle the remaining basil on top and serve warm. ENJOY!
