Pumpkin Zucchini Bread September 22, 2012

This came from a medley of ideas after I wanted some type of paleo muffins and going through the recipes I had only to find out I was short an ingredient or two for each recipe. I did however have zucchini and pumpkin, so I thought, why not?!?  CrossFit Memorial Hill decided they loved it and I got the approval and this recipe was born!!!



  • 1 cup shredded zucchini
  • 3 eggs, beaten
  • 1 tsp vanilla
  • 1 can pumpkin puree
  • 1/4 cup honey
  • 1 1/2 cup almond flour/meal
  • 1 tsp baking soda
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt


Preheat oven to 350 degrees. wet ingredients together in a bowl. In a separate bowl, mix dry ingredients together so they are mixed thoroughly. Slowly add dry ingredients to wet until mixed through. I made this into a small loaf and approx 6 regular sized muffins. You could either make large loaf, two small loafs, or 12-18 muffins. Bake for approx 30-35 minutes or until a toothpick comes out clean.
