Coconut Pumpkin Latte Cupcakes November 7, 2012

Inspiration for this recipe from TGIPaleo. Just read her intro to the muffin and it was pretty much what I was thinking as soon as I saw the recipe, but of course I had to tweek a little…I feel bad “stealing” someone else’s recipe, so I tweek and make it my own, plus I like baking with almond flour better (and didn’t have coconut flour or maple syrup). A little special thanks to my boyfriend, who just wasn’t quite happy with the frosting/topping I made, so he decided to ‘whip’ something up to make the “frosting” thicker.


Muffin Ingredients:

  • 1 cup almond flour
  • 1/4 cup flax meal
  • 1/4 cup shredded coconut
  • 1 tsp salt
  • 1 tsp baking soda
  • 3 tbsp ground coffee (We used vanilla flavored coffee beans)
  • 1 tbsp cinnamon
  • 1 tbsp pumpkin spice
  • 8 eggs
  • 1/2 cup coconut milk
  • 1 ripe banana
  • 1 cup pumkin puree
  • 1 tbsp vanilla
  • 3 tbsp honey

Frosting Ingredients:

  • 1 can full fat coconut milk (in freezer for an hour)
  • 1/4 cup toasted shredded coconut (slightly salted)
  • 1 tbsp vanilla
  • 1/4 cup walnuts
  • 2 tbsp ground coffee
  • 2 tbsp honey

Muffin Directions:

Preheat oven to 350 degrees. Mix dry ingredients and wet ingredients in separate bowls. Once each is mixed thoroughly, combine with hand mixer at a slow and steady pace. Once combined and mixed well, spoon into lined muffin tins, filling about 3/4 full with batter (my recipe ended up making approx 18 muffins). Bake for approx 30 minutes or until golden on top and toothpick comes out clean.

Frosting Directions:

Let coconut milk sit in freezer for an hour and try not to shake after freezing. Start spooning out the coconut milk (leaving the watery portion at the bottom of the can and just using the thick stuff. Add remaining ingredients to blender, chopping walnuts into small, chunky pieces. Mix with coconut fluff adding more walnuts/coconut until you get the consistency you desire. Top muffins to make cupcakes 🙂
