Another pinterest recipe…here’s the paleo version 🙂 This combines all of my loves, think fresh and warm…wonderful now that fall is here.
- 2 avocado
- container of pico de gallo (or your own homemade)
- 1/4 cup almond flour
- 2 tbsp garlic herb or jalapeno seasoning
- Pepperjack or your favorite cheese (omit if strict paleo)
Preheat oven to 350 degrees. Cut avocado in half lengthwise and remove pit. Remove extra avocado to make pit deeper if desired. (the extra removed avocado went into my mouth, but you could save it for a rainy day). Spoon pico de gallo into avocado. Add cheese over pico if desired. Mix almond flour and seasoning together and then sprinkle mixture over top of avocado and filling. Bake for 10 minutes or until flour starts to brown. Serve warm….This was also amazing re-heated the next day.
