Blondies November 15, 2012

This was inspired by a recipe found on Pinterest that was labeled paleo, but not paleo. Find the original recipe here. I made a few modifications and came out with this. I would say it’s more “cakey” than “blondie” but who cares, it was still delicious. Even better the next day after stored in the fridge.  Let’s just say this pan was gone in less than 48 hours with only two people eating out of it…

Ingredients:

  • 2 bananas, mashed
  • 1/4 cup honey
  • 3 eggs
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 2 tsp baking powder
  • 1 spoonful of cake batter protein powder (can be omitted if strict paleo)
  • 1/2 cup dark chocolate chips
  • 1/2 cup shredded, natural coconut
  • CHOCOLATE TOPPING: 1/4 cup dark chocolate chips and 1 tbsp coconut oil

Directions:

Preheat oven to 325 degrees. Mix bananas, honey, eggs, oil, and vanilla together until smooth. (Or heck, if you want chunky blondies, leave chunks of banana in there, I don’t care!) Mix flour, baking powder, and protein powder together in separate bowl. Slowly mix wet and dry ingredients together. Fold in coconut and chocolate chips, mixing evenly. Pour into a 8×8 or 9×9 baking dish and bake for approximately 25-30 minutes or until cooked thoroughly in the middle. During the last 5 minutes or so of baking, heat chocolate and oil in double boiler, until melted and drizzle or spread onto blondies. Serve warm or chilled. Both are delicious.
