Pineapple and Jicima Slaw April 29, 2013

I need to get back to blogging, seriously. I’ve been making some delicious things, but sometimes can’t remember exactly how I made it….anyways. I was looking through our fridge a while back and had some pineapple, part of a jicima, and a bag of coleslaw and this is what I came up with. Pretty light and refreshing, yet filling enough to be paired with some burgers we grilled up!

Ingredients:

  • 1 bag coleslaw
  • 1/2-1 cup diced pineapple
  • 1/2-1 cup chopped jicima
  • 1/2-1 cup chopped cucumber
  • 1/4 cup light coconut milk
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tbsp honey
  • salt and pepper to taste

Directions:

Mix all veggies/fruit together in large bowl. Mix dressing ingredients together until emulsified. Pour over slaw and enjoy!
