Asian Carrot Ginger Dressing July 17, 2013

I’ve re-recently become obsessed with this dressing. I’ve had it at several sushi places and always laugh when I remember the first time I ordered a side salad and a small bowl of chopped iceberg lettuce and tomatoes came out. I was so disappointed until I took a bite and the dressing was wonderful. Good thing the side salads were only $1.99 🙂   I’ve been trying to get more fish in my life and love making ahi tuna at home paired with this salad that I have came to love with a paleo twist on the dressing. IMG_20130710_192020Ingredients:

  • 1 cup shredded carrots
  • 3 tbsp grated ginger
  • 1 tbsp chopped shallot or garlic or BOTH 🙂
  • 1/4 cup sesame oil
  • 1/4 cup rice vinegar (you can cut it in half if you want less vinegar-y)
  • 2 tbsp tamari or coconut aminos
  • 1-2 tbsp honey (depending on how sweet you want it – can be omitted)
  • a few tbsp of water if dressing too thick

Directions:

Place all ingredients in blender or food processor and blend until smooth. Add water if you want a thinner consistency dressing.
