It’s been getting cold in Kansas City and I wanted a quick soup to warm me up but didn’t have the stuff to make chicken noodle soup. I knew I had kelp noodles and some other random things in the fridge and went in search of paleo soups with kelp noodles. Paleo Cupboard had a wonderful Ramen Noodle Soup recipe that I knew I could recreate with what I had on hand.

Asian Carrot Ginger Dressing July 17, 2013

I’ve re-recently become obsessed with this dressing. I’ve had it at several sushi places and always laugh when I remember the first time I ordered a side salad and a small bowl of chopped iceberg lettuce and tomatoes came out. I was so disappointed until I took a bite and the dressing was wonderful. Good thing the side salads were only $1.99 đŸ™‚   I’ve been trying to get more fish in my life and love making ahi tuna at home paired with this salad that I have came to love with a paleo twist on the dressing. IMG_20130710_192020 (more…)

Shrimp and BACON Fried “Rice” March 7, 2013

I was really struggling with what to have for dinner the other night. I had shrimp in the freezer and thought about bacon wrapped shrimp but also had a head of cauliflower and thought fried rice sounded good. Then I was like….WHY NOT HAVE BACON SHRIMP FRIED RICE! Duh, should have thought about that one a long time ago…it was amazing.

Sesame Noodles May 23, 2012

I love sesame noodles with a passion; however, I went on a mission to make them just as delicious without using actual noodles. Just think how many more nutrients you are getting using spaghetti squash versus pasta noodles. You can also either add in mandolin sliced cucumber or cucumber chunks, I just didn’t have a cucumber on hand, otherwise I would have!

Ingredients

Noodles:

  • 2 pounds cooked spaghetti squash
  • 1 bunch green onions, thinly sliced
  • handful of fresh cilantro, chopped
  • 2 tbsp toasted sesame seeds

Sauce:

  • 2 tbsp coconut aminos or tamari
  • 1 tbsp honey
  • 4 cloves garlic, minced
  • 2 tbsp rice vinegar
  • 3 tbsp sesame oil
  • 1 tsp chili oil

Directions

In a small bowl, mix together sauce ingredients until well blended. In a larger bowl, mix cooked noodles with sauce. Top with green onions and sesame seeds, tossing gently. Garnish with cilantro.

So this isn’t my recipe at all, but I made it and loved it so much I needed to share. This recipe comes from Holly Would If She Could‘s blog! (Thanks Brian Z for sharing the link!)  Be sure to check out her stuff, she’s got some pretty tasty looking stuff on there! I omitted the ginger from the recipe because I just don’t like it.

Paleo Pad Thai June 14, 2011

I absolutely LOVE pad thai…but when you are eating paleo, it’s definitely a challenge to make it paleo friendly between the rice noodles and the highly sugared sauce. Adapted from The Clothes that Make the Girl site, here’s my version of paleo pad thai! Power packed with veggies, good fats, and shrimp for protein…this meal definitely hits the paleo mark!
