With a little help from eMeals, I ended up creating this delicious little concoction. I modified the eMeals recipe…which by the way, eMeals is an amazing program that sends you a week of recipes along with a shopping list. They have lots of options for meals, including paleo and clean eating, and my most favorite…clean eating crockpot! Not every recipe is Whole30 compliant, but it’s pretty easy to modify the recipe. Anyways, eMeals inspired this recipe, but I made it my own by adding olives and some other herbs/seasoning.

I recently started getting meat at this wonderful place in Kansas City called the Local Pig. Delicious is all I have to say! If you haven’t been there and live here, you definitely need to check it out! Anyways, a got these super sized pork chops and pork can be difficult to cook as it is super easy to overcook. We were told brining would help as it was really hard to over cook brined pork chops. So I went investigating online and came up with this…

So this isn’t my recipe at all, but I made it and loved it so much I needed to share. This recipe comes from Holly Would If She Could‘s blog! (Thanks Brian Z for sharing the link!)  Be sure to check out her stuff, she’s got some pretty tasty looking stuff on there! I omitted the ginger from the recipe because I just don’t like it.

Thanks to my friend Michael for this recipe! I turned it into a slow cooker recipe. Today was an amazing WOD, getting a PR of a workout by 4 minutes! I can’t tell you how much going strict Paleo for 1 week helps your workout. Sundays have become slow cooker days, so be on the lookout for more recipes! 🙂

BBQ sauce is essentially loaded with sugar!!!! I could not find a bottle in the store that didn’t contain some sort of sugar. I worked hard on this BBQ sauce, so I’m a little partial, but I think it is pretty damn good! Here’s a paleo friendly version for BBQ sauce, plus slow-cooked ribs that fell off the rib!

I feel like cabbage gets a bad rap. But I was one who gave it a bad rap a few years ago. Wouldn’t touch the stuff…disgusting, gross, not my thing. Well I have changed my mind over the past few months and decided to give this veggie a chance. I am now making various coleslaws with it, and substituting thinly sliced cabbage for noodles! YUMMY!!!

Warm Bacon, Sweet Potato, and Arugula Salad May 25, 2011

I’ve been hitting the workouts hard this week, even Rx’d my very first CrossFit workout ever!!! (Following Paleo closely must be paying off!) I was in need of some starch and protein this evening because of my workouts this week. I check the Everyday Paleo site pretty regularly and found Sarah’s Warm Spinach and Sweet Potato Salad pretty good looking and thought it sounded absolutely delicious. I needed to save my spinach for brunch at work on Friday, so I bought some arugula instead to spice things up. Here’s my version of Sarah’s salad. I paired it up with a “clean” Tuna Salad (to be posted soon).
