It’s been getting cold in Kansas City and I wanted a quick soup to warm me up but didn’t have the stuff to make chicken noodle soup. I knew I had kelp noodles and some other random things in the fridge and went in search of paleo soups with kelp noodles. Paleo Cupboard had a wonderful Ramen Noodle Soup recipe that I knew I could recreate with what I had on hand.

Now that fall has finally hit, I’ve been craving soups on soups on soups. I pulled an old goodie last week, but was wanting something else and got inspired by this recipe from Paleo Cupboard. This was so delicious, I’m making again this weekend to take to a football watch party. We even changed up a few more things second go around, but it ended up being slightly more watery than the first attempt, so we added even more pureed cauliflower. Enjoy!

I had lots of veggies hanging out in my fridge along with a package of ground turkey meat…so this is what I came up with. ENJOY!

Cauliflower Bisque March 4, 2012

My friend Mindy asked that I re-create a paleo friendly version of baked potato soup. Since potatoes aren’t “technically” paleo, I needed to find something else that would do, which meant cauliflower. I added a bit of bacon and leek to bring some extra flavors and coconut milk helped make it creamy. Enjoy!

So I unfortunately came down with a bout of the stomach bug or something…this is my payback for ordering chicken tenders last night….I had not had anything to eat all day because it felt like someone was pulling my stomach in 5 different directions. Finally about an hour ago, I decided to try to eat something worthwhile. Now, nothing actually sounded good, but I knew I needed to get something in me. We always had chicken noodle soup to cure the tummy aches, so that’s what I decided to go for, major comfort food! To be perfectly honest, I was feeling crappy and did use noodles, then I looked at them and picked all of them out. Being sick does something to your brain I’m pretty sure. I was having a crazy moment, so I came up with this plus a few noodles.  Omit the noodles to make it completely paleo!

I got a request for a chicken chili recipe…and came across this on the Civilized Caveman Cooking Creations site. I turned it into a crockpot recipe, because I am 100% in love with my crockpot now that fall has arrived. I made it for a group of non-paleo friends and guess what, they loved it!!! Here’s my take!

I made this last year, but have updated the recipe to make it paleo and use the slow cooker. This way you can prepare the night before, cook while you are working, and then have dinner ready within 10 minutes when you get home. I highly recommend finding a good immersion blender, so much faster than using my magic bullet, where I could only use one cup at a time!  ENJOY!
