It’s been getting cold in Kansas City and I wanted a quick soup to warm me up but didn’t have the stuff to make chicken noodle soup. I knew I had kelp noodles and some other random things in the fridge and went in search of paleo soups with kelp noodles. Paleo Cupboard had a wonderful Ramen Noodle Soup recipe that I knew I could recreate with what I had on hand.

Now that fall has finally hit, I’ve been craving soups on soups on soups. I pulled an old goodie last week, but was wanting something else and got inspired by this recipe from Paleo Cupboard. This was so delicious, I’m making again this weekend to take to a football watch party. We even changed up a few more things second go around, but it ended up being slightly more watery than the first attempt, so we added even more pureed cauliflower. Enjoy!

First of all, I apologize for slacking on the blog…but I have a goal for the fall to post a new recipe on a weekly basis! I slacked hard core this summer just making the same old stuff over and over again as well as grilling the typical summer foods! Soooo, I decided when I got Rachael Ray’s magazine in the mail that I would pick it up and browse to get some inspiration for new recipes and within, the first few pages, had it. German-style turkey burgers. Unfortunately I cannot find this recipe on her site to share with you, but as soon as I do, I’ll update this post. I added a few things to make it my own and paleo, but she definitely nailed this one in flavor!
Pineapple and Jicima Slaw April 29, 2013
I need to get back to blogging, seriously. I’ve been making some delicious things, but sometimes can’t remember exactly how I made it….anyways. I was looking through our fridge a while back and had some pineapple, part of a jicima, and a bag of coleslaw and this is what I came up with. Pretty light and refreshing, yet filling enough to be paired with some burgers we grilled up!
Spinach Breakfast Casserole January 13, 2013
Continuing to block and still having trouble getting all my veggies in (fruit isn’t a problem, but I need to get my veggies in too!). Breakfast us probably one of my favorite meals, one because of bacon and two because I love bacon 🙂 Well that’s not the only reason, but breakfast is how you start your day and I love mixing flavors and trying new combos. This does not have bacon in it, but it could!
Veggie Casserole January 12, 2013
So my gym, CrossFit Memorial Hill, kicked off a nutrition challenge this week. I, of course, had to go big or go home, so I chose to partake in the level 3 (hardest) challenge, paleo/zone. After 2 days, I was really struggling with measuring out my food, as I feel like I am eating 2x the carbs and half the fat and protein I was previous eating when just paleo. It has been an adjustment, but I’m waiting to see my results 🙂 Anyway, so in addition to measuring out my food, I have a really hard time eating all the “carbs” that I am supposed to get. CARBS = VEGGIES and FRUIT! And since it was Friday and we were running low on things, I decided to make a vegetable medley/casserole that I blocked out the entire dish and then evenly cut up into slices for a 1 block portion. The entire casserole was 16 blocks, so we cut it up into 16 squares for 1 block per square. Pretty easy! Even if you aren’t blocking, this is still delicious. In the past, I topped with some all natural pepperoni to give it a pizza flare!
