Shrimp and BACON Fried “Rice” March 7, 2013

I was really struggling with what to have for dinner the other night. I had shrimp in the freezer and thought about bacon wrapped shrimp but also had a head of cauliflower and thought fried rice sounded good. Then I was like….WHY NOT HAVE BACON SHRIMP FRIED RICE! Duh, should have thought about that one a long time ago…it was amazing.

Crab Cakes with Roasted Red Pepper Sauce September 5, 2012

This is a less spicy version of my spicy crab cakes and a little added bonus of roasted red pepper sauce. I got the idea from I Breathe…I’m Hungry… I also added a side of avocado for good fat, green beans for a simple carb, and sweet potato mash for a starchier carb (long and hard workout yesterday). Plus my boyfriend may or may not have lost part of his tooth and he needed something soft to eat tonight 🙂

Need something quick and easy??  This is your meal! Got home from the gym around 6pm and already sitting here eating and blogging! Ahi Tuna is a great protein source with minimal fishy taste (ps, I HATE canned tuna but LOVE ahi tuna!)

Crab and Butternut Squash Bisque September 21, 2011

I made this last year, but have updated the recipe to make it paleo and use the slow cooker. This way you can prepare the night before, cook while you are working, and then have dinner ready within 10 minutes when you get home. I highly recommend finding a good immersion blender, so much faster than using my magic bullet, where I could only use one cup at a time!  ENJOY!

So I love jalapenos…I cannot help it. I buy them by the pint almost weekly and they are never ever out of stock in my place. And I add them to everything!!! And today, I added them to crab cakes. I can honestly say this meal may be one of my all time favorites. My non-paleo roomie also thought it was delicious. Of course, you could make this without the jalapeno, but why? 🙂

Mahi Mahi Tacos with Pineapple Avocado Salsa August 23, 2011

I got a whole pineapple at needed to use it up pronto before it went bad. And versus just eating pineapple for days, I wanted to make something creative with it. I found Mahi Mahi pieces at TJ’s the other day and thought those would be awesome for fish tacos because they were already cut up into pieces and frozen, so you could use as many or as little as you wanted….thus Mahi Mahi Tacos and Pineapple Avocado Salsa for dinner!

Tuna Salad Make-over June 20, 2011

Let me start out by saying, I HATE tuna salad! I have never liked it, nor do I ever think I will, but I LOVE this salad!! The dressing is made up of olive oil, dijon mustard, and lemon juice, so it’s Paleo friendly! 🙂 I found inspiration for this recipe in Rachael Ray’s magazine, but tweaked it because I hate celery, added two times the greens and tuna. I also make sure to get wild caught tuna packed in water from Whole Foods to make sure I get good quality tuna that is not too fishy tasting. I also added avocado for some good fat!!! 🙂
